Today's post is another introduction to our cutlery! I've been working hard recently, but this will mark a pause in our series. I'm looking forward to introducing new knives soon.

In this post, I'm revisiting the Wa-Santoku knife crafted by Katayama Uchihamono, which I introduced in a previous post:

Additionally, I'm excited to introduce the Gyuto version of this knife:

The content is similar to my previous post. Katayama Uchihamono, located in Echizen City, Fukui Prefecture, is known for crafting not only chef's knives but also other types of knives. They are highly regarded by chefs throughout Japan. Their knives are not only sharp but also durable.

The blade has a "Tsuchime" (hammered) texture, which helps prevent food from sticking. The octagonal handle is designed for comfort, potentially reducing the stress of daily cooking.
