It is the "Santoku VG10 Sanseido Made 33B with Bolster 165mm."

The blade is made from "VG10," a stainless blade steel produced by Takefu Special Steel in Fukui Prefecture. Not only does this steel provide a sharp cutting edge, but it is also very easy to sharpen, making maintenance straightforward.

The steel extends close to the base of the handle, adding a slight weight that allows for cutting using the weight of the blade itself. This means the knife can cut without requiring much force.
